A peek Into My Kitchen: Sweet Potato, Corn and Wild Rice Chowder

I had some dental work done this afternoon, so I made a big pot of this soup this morning. With a whole grain loaf of bread, some good cheese and a side of roasted asparagus, it made a nice dinner for a gloomy day.

Sweet Potato, Corn and Wild Rice Chowder

1 tbsp vegetable oil

I large or 2 small onions, chopped

3 cloves garlic, minced

12 cups water

1 cup wild rice

2 tsp dried oregano

1 tsp ground cumin

generous pinch salt

4 cups diced sweet potatoes (about 3)

2 1/2-3 cups corn kernels–fresh, frozen or really good canned ones (if using canned, rinse well)

A peek Into My Kitchen: Quinoa with Black Beans

Quinoa is just one of those amazing foods–it's easy to make, kid friendly and incredibly healthy.  It's high in fiber, protein, iron, folate, potassium, magnesium and low in fat.  Really, how could you go wrong?

If not rinsed well before cooking and flavored properly, quinoa can have a pretty funky taste.  Season it right, though, and you won't be able to stop eating it!

Quinoa with Black Beans

1 tsp olive oil

1 onion, chopped

1 1/2 tsp minced garlic

3/4 cup raw quinoa, rinsed wll

1 tsp cumin

1 1/2 cups vegetable broth

1 Tbsp lime juice

1 small can corn or 1 cup frozen defrosted or fresh corn

Will you be seated at the Kid’sTable this Thanksgiving?

As so many people buzz around preparing for large family gatherings at Thanksgiving, I've heard lots of talk about children's seating. 

There are a few schools of thought with regard to Kid's Tables:

1.  Separate seating for children is horrible.  No matter what the age or temperament of the child, everyone at the table should just deal with it.

2.  Children are loud, noisy beasts and grownups should not have to deal with them at all. Children should all be banished to another location.

3.Families with children should be seated together with their children and childless adults should be left in peace.

Granted, these are all extreme stances…but what is the right thing to do?
