A peek Into My Kitchen: Sweet & Tangy Stir-Fry Sauce

I get more and more fed-up every time I hear another person's 'tricks' to hide vegetables from their children. Vegetables come in such a myriad of shapes, colors and flavors that is is virtually impossible for any person to hate ALL of them. A bright, colorful stir-fry is a great way to get your child to eat veggies because it's pretty and inviting.

Even if your kids are a hard sell, this stir-fry sauce is so yummy that it just may convice them!

Sweet & Tangy Stir-Fry Sauce

6 Tbsp rice vinegar

5 Tbsp sugar

3/4 cup plus 1 Tbsp water

1 Tbsp cornstarch

2 Tbsp low-sodium soy sauce

1 Tbsp fresh ginger, grated or 2 tsp dried ginger

Combine vinegar, sugar and 3/4 cup water in a small saucepan. 

Bring to a boil, reduce heat and simmer for about 5 minutes until the sugar is all dissolved and the mixture begins to get syrupy.

Thoroughly whisk the cornstarcn into 1 1/2 Tbsp of water and stir into the sauce. 

Add soy sauce and ginger and cook until thickened.

Add into stir fry a couple of minutes before your vegetables are completely cooked.
