Quinoa is just one of those amazing foods–it's easy to make, kid friendly and incredibly healthy. It's high in fiber, protein, iron, folate, potassium, magnesium and low in fat. Really, how could you go wrong?
If not rinsed well before cooking and flavored properly, quinoa can have a pretty funky taste. Season it right, though, and you won't be able to stop eating it!
Quinoa with Black Beans
1 tsp olive oil
1 onion, chopped
1 1/2 tsp minced garlic
3/4 cup raw quinoa, rinsed wll
1 tsp cumin
1 1/2 cups vegetable broth
1 Tbsp lime juice
1 small can corn or 1 cup frozen defrosted or fresh corn
2 15 oz cans black beans, drained and rinsed
1/2 cup chopped fresh cilantro or parsely
1 ripe mango, chopped
In a medium saucepan, heat oil and saute onion and garlic until golden.
Add quinoa, broth and cumin. Stir.
Bring to a boil, cover, reduce heat and simmer for about 20 minutes, or until most of the liquid has been absorbed.
Add lime juice and corn and simmer an additional minute or two.
Remove from heat and stir in beans, cilantro and mango.
Serve warm or cold.
*If the idea of mango in this dish freaks you out, try replacing it with avocado or leaving it out completely**
